Unfussy, modern British-inspired cooking is our passion in the Walmer Castle’s kitchen, and the freshest and best local and seasonal produce always our regularly changing menus’ greatest inspiration. We share this with our customers daily by working closely with our long-standing, award-winning suppliers, who also deliver to Hawksmoor, The Fat Duck and Michelin-starred chefs including Tom Kerridge. And our signature simple recipes keep our premium ingredients’ flavours centre stage, whether you plump for a juicy steak, one of our imaginative vegetarian options or world-class British fish, pan-fried to perfection. A word to the wise – save a corner, if you can, for one of our scrumptious puds.

We’re no less ambitious at the bar. Working with west London merchant Jeroboam and artisan specialist Wanderlust Wine we co-curate an extensive and adventurous wine list rich in small independent producers from all over the world and organic and sustainable choices. Our outstanding draft beer selection includes brews from trailblazing independents such as Cornwall’s Harbour Brewing, Germany’s history-making Rothaus and Normandy cider producer Maison Sassy. Meanwhile our esteemed partner Harris Vintners, unrivalled experts in rarefied French aperitifs and digestifs, helps us give our spirits collection a delicious edge.

A business that sprang from one man’s mission to farm his North Yorkshire pasture sustainably is now an in-demand supplier curating the very best British meats from a network of small producers with a shared passion for wholesome animal husbandry and traditional farming practices. One of these, the Botterill family from the Belvoir Estate on the Lincolnshire/
Leicestershire border, is responsible for the exceptional dry-plucked and game-hung poultry we’re always delighted to serve.

Working to the highest ethical and sustainability standards, Flying Fish’s expert buyers source the best catches every sunrise from the day boats in Looe, Brixham, Newlyn and Plymouth for delivery overnight, supplementing its local produce with speciality products from exceptional artisanal merchants in Scotland and the storied Rungis market in Paris.
